冬虫夏草用語：β－グルカン
βグルカン（ベータグルカン）とは、ガン細胞に有効な免疫物質とされる多糖類のことで、アガリクスや冬虫夏草などのキノコ類などの細胞壁に含まれる成分。
グルコース（ブドウ糖）が鎖状に結合しており、グルコースの結合位置により、さらにβ1.3と1.6という成分に細分化されてる。
ガン細胞に有効とされるのはβ1,3-グルカンで、成分を含む代表的なものとして、冬虫夏草、アガリクス、メシマコブ、ハナビラタケ、ハタケシメジ、カバノアナタケ(チャーガ)、鹿角霊芝などがある。

β1,3-グルカン(β-glucan、べーた-)とは、グルコースがβ1-3型の結合で連なった多糖である。植物や菌類、細菌など自然界に広く分布するが、アガリクスやメシマコブ、霊芝などのβグルカンは強い免疫賦活作用、制癌作用を持つとして特に注目が集まっている。β1,4-グルカンが由来に関係なく全てセルロースという名前を持つのに対し、β1,3-グルカンは由来によって様々な名前が与えられている。また、単にβグルカンと言った時には通常β1,3-グルカンのことを指す。βグルカンはそのカタカナの呼び名が示す通り元々アメリカで発見された物質です。β1,3グルカンもアメリカの研究陣がパン酵母（イースト菌）細胞壁から発見した糖質分子が1番目と3番目の水酸基で結合した螺旋連鎖状の物質を名づけた言葉です。螺旋の回転方向を表す”D”を加えて、日本語ではβ1,3Dグルカンと呼ばれることもあります。1番目と3番目の結合だけではなく、パン酵母細胞壁からβグルカンへの精製過程で1番目と6番目の結合したいわゆるβ1,6グルカンと呼ばれる分子の鎖もわずかに残るため、日本ではβ1,3/1,6グルカンなどと呼ばれることもあるようです。米国などで免疫調整の材料として研究対象となっているのはβ1,3グルカンであることが多いようです。研究者の実験論文の中では”Poly(1-6)-Glucopyranosyl-(1-3)b-D-Glucopyranose”という学名を使ったり、単にBeta Glucanという言葉を使うこともあります。
最も一般的に採り上げられているベータグルカン（ベータ1,3Dグルカン）の起源はパン酵母（イースト菌）等の、本来免疫細胞が敵（非宿主）と認識する「菌」です。世界各国の研究陣が実験研究の中でベータ1,3Dグルカンの免疫刺激を機序とした非宿主細胞に対する抵抗を主題としています。最近の（2007年現在までの）研究では、宿主細胞のマクロファージや好中球がベータ1,3Dグルカンを通してその起源である「菌」に対して示す反応を利用して、より強力な非宿主（変異細胞やウイルスなど）に対する攻撃力を増加させる、というものもあります。
酵母β1,3Dグルカンは2007年7月現在世界で6,000例を越える実験・治験発表例が記録されています。その殆どがβ1,3Dグルカンが白血球細胞の中のマクロファージや好中球などの自然免疫細胞に結合されて（貪食されて）それら自然免疫を刺激することにより、ウイルスや菌等の外敵あるいは変異した宿主細胞（新生物、腫瘍細胞などとも呼ばれる）に対する免疫抵抗力が強化される、といったものです。一方で酵母βグルカンは白血球を特異的に刺激することによって過剰あるいは不要な免疫抵抗を起こすのではないか、との疑問も呈されてきました。例えば酵母由来β1,3Dグルカンは組織移植によって起こる宿主細胞の拒絶反応を促進（増大）するのではないかといったような疑問です。1996年に米国外科医療誌[Journal of Surgical Research]62(2)で発表されたW.K.Washbum博士等のマウス実験論文（論文表題は日本語で「白血球特異性免疫刺激剤のβグルカンは臓器移植の拒絶反応を促進しない」）はこうした疑問を払拭し、酵母β1,3Dグルカンを投与してもドナー組織移植による拒絶反応を促進しないという結果を発表しています。

1941年 アメリカの化学者、ルイス・ピレマーが出芽酵母Saccharomyces cerevisiaeの細胞壁から抽出した物質に｢ザイモサン｣と名づけた。
1960年 アメリカ・チューレーン大学の創始者、ニコラス・ディルジオが同じく出芽酵母の細胞壁から抽と出し、構造を明らかにしてβ1,3-グルカンと名づけた。
1963年 βグルカンが、がん細胞の縮小に効果を持つことが初めて発表された。
1984年 米マサチューセッツ工科大学(MIT)とAlpha Beta Technology社(ABT)の産学共同研究で酵母βグルカンの微粒子精製に成功。
1985年 日本で、シイタケ由来のレンチナンが天然由来の抗がん剤として認可を受けた。2007年現在ではこの他に、カワラタケ由来のクレスチン、スエヒロタケ由来のソニフィランも認可を受けている。
1990年 MITとABTが共同で酵母βグルカン粒子から医療向け水溶性βグルカン（注射液）の開発に成功。
1994年 米ルイビル大学で酵母βグルカンが癌に及ぼす影響の研究を開始。
1999年 米ルイビル大学微生物学研究室と同大学ジェームズ・ブラウン癌センターが共同で酵母βグルカンと最新分子標的抗癌剤（モノクロナール抗体抗癌剤）の併用効果について前医療実験開始。
2001年 酵母細胞壁β1,3Dグルカンは免疫細胞だけでなく、ヒトの皮膚線維芽細胞上の受容体に結合して皮膚組織修復を促進する、という実験結果が米免疫・感染症医療誌「Infection and Immunity」69(6)で発表されている。
2002年 日本の研究機関とアメリカルイビル大学病理学研究室が2001年に共同で行った酵母由来ベータ1,3Dグルカンの経口投与による抗腫瘍作用マウステスト実験結果が米健康医療誌「JANA（The Journal of American Neutraceutical)」の2002年Vol5.No.1号で5ページにわたり紹介される。
2004年 米免疫医療誌[The Journal of Immunology]2004 173で経口投与による酵母β1,3Dグルカンと最新分子標的抗癌剤（リツキシマブ、トラスツズマブ）併用による抗腫瘍相乗効果の前医療動物実験結果が発表される。
